Senior Sous Chef – Modern Lusitanian Cuisine

About the role

We are seeking a talented Senior Sous Chef to join Luzzi, a newly opened restaurant on the top floor of Andaz Lisbon. You will work closely with the Head Chef Specialty and the Director of Culinary to uphold the brand’s modern Lusitanian dining concept and deliver an exceptional guest experience.

Key responsibilities

• Lead and support daily Luzzi kitchen operations, ensuring smooth service.
• Coordinate with the Head Chef and Director of Culinary on overall kitchen management.
• Maintain the highest standards of food quality, presentation, and consistency.
• Train, motivate and supervise the kitchen team, including Chef de Partie and Commis Chefs.
• Assist in menu development, recipe creation, and seasonal offerings aligned with the Luzzi concept.
• Ensure compliance with HACCP, food safety, hygiene and sanitation standards.
• Monitor inventory, food costs and labour costs to meet budget targets.
• Drive continuous improvement, innovation and guest satisfaction.
• Promote teamwork, clear communication and a positive work environment.

Required profile

• Proven experience in an independent high‑end restaurant.
• Strong knowledge of modern culinary techniques and kitchen operations.
• Passion for contemporary Portuguese/Lusitanian cuisine.
• Leadership and team‑management abilities.
• Excellent organisational and communication skills.
• Experience training and developing kitchen staff.
• Ability to thrive in a fast‑paced, high‑pressure environment.
• Fluency in Portuguese and English (additional languages a plus).
