Head Chef - Italian Restaurant

About the role

We are seeking an experienced Head Chef to lead the kitchen of an authentic‑modern Italian restaurant in Lisbon. In this hands‑on role you will shape the menu, uphold Italian culinary traditions, and create a welcoming dining experience for guests.

Key responsibilities

• Direct daily kitchen operations, ensuring consistency, timeliness and high culinary standards.
• Recruit, train and mentor a team of 10+ kitchen staff, fostering a culture of respect and craftsmanship.
• Collaborate with venue management to deliver seamless, hospitality‑driven service.
• Source seasonal, sustainable ingredients from local farmers and trusted Italian suppliers.
• Monitor food costs, labour and inventory, create technical sheets and implement waste‑reduction systems.
• Maintain a clean, well‑organized kitchen and ensure all equipment is in optimal condition.
• Partner with HR, Operations, Logistics and Finance to support smooth overall operations.
• Contribute to new restaurant openings and group projects.

Required profile

• Minimum 5 years of professional experience in Italian cuisine.
• Proven ability to lead, inspire and mentor a sizable kitchen team.
• Passion for simple, authentic Italian cooking with a focus on local, seasonal, sustainable sourcing.
• Strong organisational skills, balancing creativity with operational efficiency.
• Strategic, composed leadership in fast‑paced environments.
