About the role

The Distillery Technician is responsible for monitoring, controlling and optimizing fermentation, distillation, water‑treatment and auxiliary systems using automated process control tools. The role ensures safety, quality, operational efficiency and regulatory compliance while working in a rotating shift schedule that may include holidays.

Key responsibilities

• Operate, monitor and document fermentation, distillation, reverse osmosis, utilities and associated systems according to procedures, safety standards and quality expectations.
• Adjust operational parameters for fermentation and distillation, including chemical receipt and steam supply.
• Control water‑treatment processes, steam supply to carbon filters and chemical replenishment.
• Manage the Woodchip process, including preparation of distillate.
• Use PLC/DCS/SCADA systems to monitor critical parameters, respond to alarms and resolve abnormal conditions.
• Analyze process trends, perform adjustments to keep parameters within target ranges, and support continuous‑improvement initiatives.
• Participate in troubleshooting, root‑cause investigations and CAPA implementation.
• Conduct sampling, testing and documentation using LIMS and other digital manufacturing systems.

Required profile

• Strong analytical ability and technical understanding of industrial processes.
• Experience identifying operational deviations and executing troubleshooting actions.
• Capability to work rotating shifts, including holidays.
• Commitment to safety, quality, data integrity and operational reliability.
