Sous Chef – Luxury Resort Kitchen

About the role

The Sous Chef will support the Executive Chef in delivering high‑quality culinary experiences at Costaterra Golf & Ocean Club, a private members‑only resort in Comporta, Portugal. This role combines hands‑on food preparation with leadership of kitchen staff to ensure smooth operations during service.

Key responsibilities

• Prepare and plate dishes to specification, maintaining portion control and quality standards.
• Supervise, schedule, and discipline kitchen personnel, ensuring compliance with health and safety regulations.
• Assist with menu planning, inventory management, and ordering of supplies.
• Maintain proper food temperatures, storage, and sanitation throughout the kitchen.
• Operate and clean kitchen equipment such as grills, ovens, steamers, slicers, and warmers.
• Record waste and follow waste‑control guidelines.
• Perform opening, closing, and side‑work duties as required.

Required profile

• Proven experience in a fast‑paced kitchen environment, preferably in a resort or luxury hospitality setting.
• Ability to make quick, sound decisions during service periods.
• Strong leadership skills with a focus on staff development and discipline.
• Flexibility to work varied hours, including nights, weekends, and holidays.

Required skills

• Knife skills and proficiency with kitchen equipment (grills, ovens, steamers, slicers, etc.).
• Food safety and sanitation knowledge.
• Menu planning and inventory management.
• Waste control and cost‑management awareness.
