Restaurant Manager – Onda Restaurant

About the role

Aethos Ericeira is seeking a Restaurant Manager to lead Onda, its seafood‑driven restaurant, in a unique clifftop wellness retreat. The role combines hands‑on service leadership with strategic oversight, ensuring every guest experiences conscious dining aligned with the brand’s sustainability and wellbeing values.

Key responsibilities

• Oversee the complete guest journey, from reservation to post‑dining feedback, delivering a welcoming and sustainable experience.
• Manage daily restaurant operations, including reservations, mise‑en‑place, and seamless communication between kitchen and floor.
• Handle service recovery and guest complaints, ensuring swift and courteous resolutions.
• Develop and maintain staff schedules, training programs, and performance standards.
• Control budgets, inventory, and cost‑of‑goods, working closely with the F&B Manager to meet financial targets.
• Uphold Aethos brand standards, incorporating the “Rules are Different Here” identity into all service aspects.
• Foster a culture of community, wellness, and sustainability among the team and guests.

Required profile

• Bilingual Portuguese and English with excellent communication skills.
• Proven leadership experience in a boutique or upscale restaurant environment.
• Passion for hospitality that intersects with wellness, design, and sustainability.
• Comfortable wearing multiple hats and visible as the face of the dining experience.
